Ingredients


    3 C. Brown Rice
    1 C. Wild Rice
    1 zucchini
    1 summer squash
    1 head/crown of broccoli
    2 plum tomatoes
    1/2 cup white (Great Northern) beans- cooked
    1 cup mixed bell peppers
    8 oz. lean ham
    3 T extra virgin olive oil
    1/4 cup soy sauce - low sodium



Tips

substitute chicken, pork, beef tenders, tofu or have it all vegetarian
bean aren't necessary
add onions, mushrooms, carrots if desired or any other veggies


Directions

Cook brown rice separately. Cook or reheat ham separately.
Chop up all veggies.
We used broccoli, bell peppers, zuccini, summer squash, and tomatoes. If you like onions or mushrooms, add those. Carrots go well, too. Instead of ham, you can use chicken or pork or tofu.

Heat up 1T olive oil in the wok. Add 1/4 cup water for veggies with the broccoli and peppers, cover pan and let steam awhile. Add the squash and cook a bit more, then add the tomatoes. Add ham. Next add the rice. Add more olive oil if necessary (or water?) to keep from burning. Finally add soy sauce. Mix it all up. Serve.
