A tasty healthy alternative to store bought tater tots. A tasty healthy alternative to store bought tater tots.
Number of Servings: 16


    2 small sweet potatoes
    1 egg
    1 t. salt
    1.2 c. panko bread crumbs
    herbs/seasonings as desired ( I have used chipotle seasoning, garlic powder, and oregano, 1 t. each)


Feel free to experiment with spices and seasonings, and add seasonings to the bread crumbs as well!


Grate sweet potato and par-boil for 2 minutes in a pot of salted boiling water. After par-boiling, place potatoes in a bowl of ice water to stop it cooking further. Drain thoroughly, squeezing out moisture. *Can also use mashed sweet potato*

In a large bowl, mix potatoes, egg, salt, and desired seasonings together. In a separate bowl, mix panko bread crumbs and additional seasoning if desired. Roll potato into approx. 2 inch pieces and coat with panko crumbs. Place on cookie sheet (ungreased). Bake at 425 degrees for 20 minutes, turning halfway through. Makes approximately 16 tots.
