Introduction

This is Wonderful. JM recommends you slice the veggies with a veggie slicer creating a ribbon type effect. Very pretty when plated. However, I am a women who is never done, so I used the Veggie Slicer and sliced them into Ridged Ovals. Not as pretty, but a whole lot faster. Also, there is a lot of room to play here. If you have a market like Sprouts, they make over 15 varieties of chicken sausage daily. I used a Hot Parmesan Chicken Sausage and a Basil Chicken Sausage. Just go with the flavors you like. I also used Canned Tomato’s vs. Fresh because it was faster and the Seasoning is included. If you decide to omit, keep in mind you will need addtional seasoning or this will be bland. Ingredients

    Ingredients:

    2 TBSP Coconut Oil
    2 Zucchini Sliced
    2 Summer Squash
    2 Links Sprouts Hot Italian Chicken Parmesan Sausage
    2 Links Sprouts Basil Italian Chicken Parmesan Sausage
    1 Can Hunts Diced Tomatoes w/Roasted Garlic
    1 Can Hunts Tomato Paste w/Basil and Garlic

Tips

I used a can of tomato paste because I like a thicker sauce. This item can be omitted. Original recipe also uses Parmesan Cheese. It has been omitted here. Original recipe uses fresh diced tomato with seasonings. I had to adapt for my situation. I am sure that is even better when you use a fresh tomato.


Directions

Grill Sausage on George Foreman type grill 8-10 minutes until no longer pink inside. Slice diagonally.

Place Coconut Oil in Pan large enough to hold/sauté the veggies. Begin to Warm on medium high.

If you have not sliced the Squash and Zucchini, do so now.

Once hot, add to pan and Sauté until edges begin to become transparent. This will vary depending on the thickness. If you do veggie ribbons it will be 2-3 minutes, for slices 5-6 minutes.

Add Sausage and stir to combine. Add tomato paste. Add can tomatoes. Stir gently to incorporate tomato sauce and when mixture begins to bubble, remove from heat. No more then 3-4 minutes. Enjoy!


Serving Size: Plate on 4 plates. A great side would be a nice garden salad.
