    1 large zucchini, grated & excess liquid removed
    2 egg whites
    1 cup panko bread crumbs
    Salt & pepper, to taste
    1/2 cup Parmesan cheese, shredded
    2 tsp olive oil
    Salt & pepper, to taste


1. In a large bowl, combine all the ingredients. Mix thoroughly and shape into small patties.

2. Heat a large skillet over medium heat and add oil. Once hot, add cakes and cook for 2 - 3 minutes per side.

3. Remove from pan and place on a baking sheet. Put in the oven under a HIGH broil and cook an additional 3 - 4 minutes or until heated through.

Serving Size: Makes about 12 cakes
