    8 slices whole grain bread, diced
    1 Sweet Onion, diced
    2 stalks of celery, diced
    1 c chicken or vegetable broth
    2 T olive oil
    1 c cooked quinoa or wild rice
    1 t sage leaves, crumbled
    1t thyme, crumbled
    1/2 c dried cranberries
    3/4 c pecans
    salt and pepper to taste


Dice bread and set aside. Dice celery and onions and sauté in olive oil in a skillet. Cook until translucent. Stir in Cooked Quinoa or wild rice. Add 1/4 broth, herbs, cranberries and pecan, stir to moisten. I like to chop the cranberries into a small dice, but you can add them right out of the pacakge. Add more stock depending on how moist you like your stuffing. If you are going to fill a bird, use less broth.

This can be a vegetarian dish by exchanging vegetable stock for the broth, and cooking separately from the bird.

Place stuffing mixture in an oven-proof bowl or pan, cover with foil. Bake for 30 minutes at 350. You can remove the foli for the last 10 minutes for a dryer topping.
