    1 medium-sized head green cabbage
    2 Tbsp olive oil
    3 Tbsp fresh squeezed lemon juice
    1 lemon, cut into 8 wedges
    salt & pepper, to taste


1. Preheat oven to 450 degrees. Lightly spray a baking pan with cooking spray and set aside.

2. Cut the cabbage into 8 wedges. Carefully trim the core and stem from each wedge and arrange in a single layer on the prepared pan.

3. Combine the olive oil and lemon juice in a small bowl. Using a pastry brush, brush the top and sides of each wedge and season with salt and pepper.

4. Place in oven and roast for about 15 minutes, or until the side touching the pan is browned. Remove from the oven and using tongs, turn each wedge to the opposite side. Return to oven and roast 10-15 minutes more, until browned and cooked through. Serve hot, with a lemon wedge on the side for additional flavor.
