    1/3 cup rolled oats
    1/4 cup unsweetened applesauce
    1/4 cup liquid egg whites
    1/2 tsp baking powder
    10 drops vanilla stevia (or 2 packets + a splash of vanilla)
    cinnamon/apple pie spice to taste


Mix together all ingredients in a microwave-safe bowl or dish (I like to use a large ramekin). Microwave for 2:30-3:00 minutes, or until all egg is cooked and liquid is gone. Let cool a bit or else you'll burn your tongue! :P Enjoy with extra stevia & cinnamon sprinkled on top.
