Ingredients

    *swanson low sodium 100% fat free chicken broth, 6 cup
    **Grace* Coconut milk Powder, 5 tbsp
    Chicken Breast, no skin, 3 breast, bone and skin removed
    Kale, 5 cup, chopped
    Water, tap, 3 cup
    Curry powder, 3 tbsp
    Basil, 3 tbsp
    Dill weed, dried, 3 tbsp
    *Dried Mint, 6 tsp
    *MORTON Sea Salt, Fine Salt, 3 tsp
    *Red Potatoes (4 medium potatoes)
    *Onion powder, 2 tbsp
    Garlic powder, 3 tbsp
    Peas, frozen, 2 cup
    Yellow Sweet Corn, Canned, 1.5 cup

Tips

I used frozen peas, but I'm sure fresh peas work just as wonderfully! Add more salt if you want. I try not to add too much.


Directions

Heat up water and chicken broth in large soup pot. Add diced chicken and diced red potatoes to broth. Add all herbs, spices, coconut powder & coconut oil. Cook until chicken and potatoes are almost completely cooked. Add kale, frozen peas, & corn. Let simmer for about 5 minutes.

Serving Size: 10
