Ingredients

10 medjool dates
1/4 cup unsweetened cocoa powder
1/4 cup raw almonds
1/4 cup unsweetened unsalted almond butter
Tips
This can easily be made 100% raw-vegan if you use raw almond butter and raw cocoa powder! You can also roll these balls in flaked coconut, chopped nuts, or anything else you can think of!
Directions
Remove the pits from the dates. Pulse the dates in a food processor until they are very fine. Add the vanilla, almonds, and 2 tablespoons of the cocoa powder. Pulse until completely combined.
Roll the mixture into 16 equally-sized balls. Break each ball into two pieces. Make an indentation in one piece and flatten the other. Put 1/4 tablespoon of almond butter in the indentation, then top it off with the flattened half of the ball. Pinch the seams and gently roll into a ball shape again. Repeat with the remaining balls.
Put the rest of the cocoa powder in a zip-top bag and add the balls. Close the bag and shake so that each ball is coated in a thin layer of cocoa powder.
Serving Size: Makes 8 servings (two truffles per serving).
