    100% Extra Virgin Olive Oil Cooking Spray (For Casserole Dish)
    1/2 Cup Cardio Choice Light Butter Spread
    1/4 Cup Bob's Red Mill Gluten Free All Purpose Baking Flour
    1 tsp Morton Lite Salt
    1 tsp Black Pepper
    1/2 Cup Daisy Light Sour Cream
    2 Cups Lactaid Fat Free Milk
    3/4 Grated Parmesan Cheese
    3 Cups Of Red Potatoes
    2 1/2 Cups Yams
    2 Cups Shredded Cheddar Cheese


Preheat Oven to 400 F. Spray a 2 Qt casserole pan with cooking spray. Peel and chop the potatoes and mix half of them together in the pan. Then melt the butter on the stove and when it's melted whisk in the flour. Once it's completely mixed add the salt, pepper, sour cream and milk. Once that's mixed add the Parmesan cheese and stir that in. Once it's completely stirred pour half the mixture over the potatoes in the pan. Then add the other half of the potatoes and pour the rest of it over top. Then place in the oven for 40 minutes (If top is browning too much put aluminum foil over top). After 40 minutes add the cheddar cheese and bake 5 - 10 more minutes.
