    1 lb Lean Ground Beef, Cooked
    1 cup onion, diced
    1/2 cup yellow pepper
    1-2 cups 2% Cheddar Cheese
    10-12 corn tortillas
    2 cups Red Enchilada Sauce


Use green or yellow or red peppers - your choice or what's available.


Cook ground beef and crumble well. Drain fat and rinse with water/drain. Add onion and pepper and cook til slightly tender.

Spray 9x13 pan with PAM and pour in some enchilada sauce. Place tortillas along bottom of pan, tearing as necessary to fit. Place half of hamburger/onion/ pepper mix on top, pouring enchilada sauce over it. Sprinkle with cheddar. Place another layer of tortillas and hamburger mix and enchilada sauce and cheese on top. Top with remaining tortillas and pour enchilada sauce on top. Bake in 350 oven for ~20-25 minutes.
