Grilled Chicken Parmesan
IntroductionMy kis love Chicken Parmesan, but being that I am eating low carb, I couldn't make it the same way anymore. 2 lbs thin chicken breast cutlets
salt and black pepper
olive oil, about 5 tbsp for drizzling
4 garlic cloves, chopped
1 tsp crushed red hot pepper flakes
1 small yellow onion, finely chopped
28 oz. fire-roasted tomatoes
20 fresh basil leaves, shredded or torn
1/2 c parmigiano-reggiano
1/2 lb smoked mozzarella, thinly sliced
The smoked mozzarella comes in a chunk in the specialty cheese section. I just sliced it thinly width-wise. The slices were super skinny, but because there were so many of them, it worked. If you can't find the smoked cheese, I am sure regular would be just as good.
While the chicken is cooking, make the sauce. Place a medium pot over medium heat. Add about 1 tbsp oil. Add the garlic, pepper flakes and onion. Cook for 10 minutes, stirring often. Add the tomatoes and heat through, about 2 minutes. Wilt in the basil.
Preheat the broiler. Scoop a little bit of the sauce into the bottom of a casserole dish. Layer the chicken and rest of sauce on top. Sprinkle with parm and lay mozzarella on top. Slide under the broiler for 3 minutes.
