Ingredients

    3 boneless chicken breasts
    2 T extra virgin olive oil
    2 T corn starch
    1 cup mushrooms
    2 cloves garlic
    1 medium red bell pepper
    half an onion
    1/2 cup cashews
    3 T honey
    3 T soy sauce ( i prefer low sodium)

Directions

Heat olive oil in a pan over medium brown mushrooms then remove from pan. Coat diced chicken with 2 T cornstarch and brown in pan with additional T of olive oil. Add garlic, peppers and onions. Add cashews. Add cooked mushrooms. Combine honey and soy sauce in a cup and then pour over all ingredients.
