    1 roma tomato diced
    1 cup of onion diced
    2 Jalapeno peppers diced
    1/2 cup of water
    5 eggs
    Salt to taste


In non stick pan cook tomato, onion, and jalapenos for about 5 min. Add water and cook 2 more minutes until it maskes a sauce. Add eggs and mix until blended. Cook for 8-10 minutes until eggs are cooked. These are great with fake fried beans (boiled beans that have been mashed without oil or lard)

Serving Size: makes 5 tacos
