    1/4 cup fresh lemon juice
    1 tbsp pepper
    3 chicken breasts
    1 tbsp fresh thyme leaves
    2 large garlic cloves
    1 tsp lemon zest
    2 tbsp extra virgin olive oil


Whisk together lemon juice, pepper, salt, and add oil in a stream whisking until marinade is emulsified.
With rolling pin or pounder flatten chicken to 1/4 inch thick between sheets of plastic wrap.
In a large plastic bag, marinate chicken in lemon marinade, chilled, for 30 minutes.
Prepare grill.
Make gremolata:
In small bowl stir together thyme leaves, garlic, and lemon zest.
Grill chicken on an oiled rack for 2 minutes on each side. Serve chicken sprinkled with gremolata and garnish with lemon.
