    1 cup dried black beans
    1/2 cup dried quinoa
    1/2 cup grated zucchini OR 1/4 cup grated zucchini and 1/4 cup grated yellow squash
    1/2 cup grated carrots
    1/2 cup chopped onions
    1/2 cup diced celery
    1 serrano pepper, finely minced
    1 clove garlic, finely minced
    1 T olive oil
    1 T chili powder
    1 t black pepper
    1/4 cup buckwheat flour (for coating)


1. Soak black beans, then cook until tender. Combine quinoa with 1 cup water and bring to a boil. Cover and simmer for 15 minutes. Preheat oven to 375.

2. Heat olive oil in a skillet. Saute onion, celery, garlic, and pepper until tender.

3. Combine all ingredients but quinoa and flour in a food processor. Blend until fully mixed.

4. Stir in quinoa (for texture, can also blend in food processor) and form 6 burger patties. Coat in flour and place on a foil-lined baking sheet (optional: use a small amount of cooking spray). Bake for 25-30 minutes, turning halfway through.
