Introduction

A simple no-mayo tuna melt. A simple no-mayo tuna melt.

Ingredients

    1 can Progresso artichoke hearts, cut up
    1 pouch White Albacore tuna
    1 can petite diced tomatoes, drained
    1 T. olive oil, optional
    garlic, minced, to taste
    1 t. dried basil
    salt to taste
    fresh ground black pepper to taste
    1 oz. part-skim mozzarella
    4 slices reduced calotie whole wheat bread, toasted

Directions

Combine artichoke hearts, tuna, tomatoes, olive oil, garlic, basil, salt and pepper in a medium bowl. Transfer to a small baking pan and top with cheese. Broil for 5-6 minutes or until cheese is melted and slightly browned. Serve over toast, open-faced style.
