Introduction
A simple vegetable dish, that tastes so delicious. Grilling is the key ingredient to add that smokey flavor. Also i read recently that adding small amounts of healthy fats helps to better absorb the beneficial vitamins of vegetables, like zucchini. A simple vegetable dish, that tastes so delicious. Ingredients

Olive Oil, Extra Virgin, 1 tbsp (eyeball it) (if you have a misto sprayer you can spray it instead, or you can baste it to cut back on the amount)
Two Zucchinis, (Est 4 cup, sliced)
salt and pepper to taste
Directions
wash and dry 2 zucchinis and cut off the 'ends' (discard, i compost mine)
Cut each zucchini in half width wise, and then in half again lengthwise. Cut each Zucchini quarter into at least 4-6 slices.
Place on aluminum foil. Drizzle with olive oil, and season to taste with salt and pepper.
Grill over med-high heat for 10-20 minutes or until tender. To serve drizzle with a tiny bit more Olive Oil and sprinkle a little more salt and pepper to taste.
