    2 Tbsp Olive Oil
    2 Tbsp Whole Wheat Flour
    1/2 cup onion, diced fine
    1 Tbsp dried parsley or fresh if available
    1 clove garlic, minced fine
    1 1/2 cup skim milk, hot but not boiling
    1/2 cup Parmesan cheese
    1 dash salt, or to taste
    1 dash black pepper, or to taste
    3/4 lb. Whole wheat macaroni, elbow
    2 pounds frozen broccoli florets
    1/2 cup ham cubes
    1/2 cup cheddar cheese, lowfat
    1/4 cup whole wheat bread crumbs


The broccoli does not have to be cooked in the boiling water. It can be added to the casserole frozen, just add an extra 15 minutes to the baking time.


Preheat oven to 375 degrees and spray a 2-quart casserole with nonstick cooking spray.

Bring a large pot of water to a boil.

In a 2-quart saucepan, cook onion & garlic until translucent, then add the flour, salt pepper, and parsley. Cook until the mixture for two minutes. Slowly whisk in the hot milk and simmer, stirring occasionally for 4 minutes. When thickened, add parmesan cheese and season with salt and pepper to taste.

Add the macaroni and broccoli to the boiling water and cook until the pasta is al dente, about 7 to 8 minutes. Drain the pasta.

Pour the macaroni and diced ham into the prepared casserole dish. Immediately pour the milk mixutre over it and stir to combine. Sprinkle the grated cheddar cheese over the top and then sprinkle the breadcrumbs over the cheese.

Bake, uncovered, for about 30 minutes or until the edges are bubbling and the top is golden brown. Remove from the oven and let stand for 10 minutes before serving.
