Yummy way to really kick up a protein breakfast! Yummy way to really kick up a protein breakfast!
Number of Servings: 1


    1/2 cup Egg Beaters
    salt & pepper to taste
    1/4 cup Reduced Fat Cheddar Cheese, shredded
    4 cherry tomatoes
    2 slices of fresh mushrooms (large or more small)
    1 - 2 Tbsp. Green Onions, chopped
    2 Tbsp. fresh Cilantro (more or less to taste)
    2 Tbsp. Salsa


I make this for breakfast, add a piece of fruit and it's a breakfast that satisfies me at least until morning break (yogurt or fruit).


Heat frying pan over med-high heat. Spray with cooking spray. Add egg beaters, cheese & veggies, salt & pepper and scramble until almost done. Add Salsa and Cilantro, finish cooking. Serve warm - is also wonderful with a dollop of fat free sour cream!

Serving Size: Makes 1 good sized serving.
