    1 lb. lean italian turkey sauasge, such as jennnie-o
    1 large yellow onion, chopped
    3 garlic cloves, crushed
    2 boxes chicken stock, such as Kitchen Basics
    2 cups Swiss Chard,Kale, or Cavolo Greens, chopped
    2 Baked Potatoes, cut into 1/2 inch slices and then cut each slice into 3 pieces to make bite size chunks
    1/2 cup non-fat milk
    1/2 cup heavy cream
    5 pieces turkey bacon


Brown bacon in the bottom of a heavy stock pot over medium heat. Remove bacon just before it looks fully cooked, crumble when cooled. Add onion to pan and saute onion in bacon fat, add a bit of oil to pan if needed, until onion is soft and golden in color. Add garlic and saute 2 min. Split sausage link and take out of casing, add meat to onions and cook until just browned and crumbled. Add greens(kale, chard, or cavolo) and potatoes and stock. Simmer until greens are wilted and potatoes are tender about 30 min. Turn heat off and add milk cream and bacon to pot. Serve immediatly or keep in refridgerator for 1 week.
