Ingredients

    Salad:
    Chicken Breast, no skin, 16 ounces
    Grapes, 1 cup, seedless
    Apricots, dried, 0.5 cup, halves
    Onions, raw, 0.25 cup, chopped
    Cranberries, dried, sweetened (craisins), 0.5 cup
    Walnuts, 0.25 cup, chopped
    Celery, raw, 0.5 cup, diced
    Scallions, raw, 0.5 cup, chopped
    Bib Lettuce, 1 head
    Dressing:
    Mayo with Olive Oil (reduced fat), 0.5 cup
    Curry powder, 2 tsp
    Honey, 0.67 tbsp
    Lemon Juice, 2 tsp
    Lime Juice, 2 tsp

Tips

Serve with healthy, low fat crackers for a delicious and hearty, yet light meal!


Directions

Steam the chicken until done, when done cut into bite size cubes. Mix the chicken in with all the other salad ingredients except the lettuce, and set aside. Prepare the dressing by mixing together the ingredients, then pour over the chicken salad and mix together. Serve on bed of lettuce.
