Ingredients

FOR SPICY COCKTAIL SAUCE:
1/2 cup Ketchup
1 Tablespoon Prepared Horseradish
1 teaspoon lemon juice
1/2 teaspoon of Worcestershire Sauce
For OYSTERs:
1/2 cup Yellow Cornmeal
1 teaspoon Paprika
1/2 teaspoon Salt
1/4 teaspoon Cayenne Pepper or White Pepper
1/4 teaspoon Ground Black Pepper
1/4 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
32 Medium Oysters (well drained)
2 Tablespoons of Safflower or Extra Virgin Olive Oil
Lemon Wedges(optional)
Tips
**To drain well, place oysters on paper towels for a few minutes before coating with cornmeal mixture**
Directions
Preheat Oven to 450.
In a small bowl, combine ketchup, prepared horseradish, lemon juice and worcestershire sauce; Set aside.
In a shallow dish, combine cornmeal, paprika,salt, cayenne pepper, black pepper, garlic powder and onion powder; Mix well.
Place oysters in cornmeal mixture and coat well.
Coat a pan or cast iron skillet with the oil and place in oven for 3 minutes, or until very hot.
Arrange oysters in a single layer in pan or skillet. Bake at 450 for 8 minutes; turn and bake for an additional 8 minutes or until golden brown.
Remove oysters from pan, serve immediately with cocktail sauce and garnished with lemon wedges
Serving Size: Yields 4 Servings(8 oysters and 2 Tablespoons cocktail sauce)
