    about a pound of chicken breasts
    1 medium onion sliced
    2 cloves garlic, minced
    1 tsp cumin
    1 tsp oregano
    1 tsp pepper
    1 tbs lime juice
    1 16 oz. jar salsa verde (whatever brand you like, I used Goya salsa verde)
    1 can white beans ( i used bushe's best)
    1 1/2 cup low fat sour cream


Could be served by itself like a soup or over quinoa or rice.


Place chicken in slow cooker.
Mix all other ingredients, except sour cream and beans, and pour over chicken.
Cook on low 6-8 hours or high 3-4 hours.
Remove chicken and shred.
Add sour cream and beans into the sauce, stir well.
Place chicken back in the slow cooker.
When beans are warmed through (about 10 mnts.) dinner's ready.

  • I am super happy with this recipe. I left out the white beans b/c hubby doesn't like them. My nail tech told me about slower cooker chicken and verde sauce and I had to make it. Glad I found a recipe on Spark. - 9/15/12
