    4 cups vegetable broth
    4 cups diced tomatoes
    1 tsp basil
    1/2 tsp oregano
    3 carrots, chopped
    3 stalks celery, chopped
    1/2 onion, chopped
    2 zucchini, chopped
    2 yellow crookneck squash, chopped
    1 can white beans (or other bean - kidney, chickpea, etc.)
    3 cloves garlic, minced
    2 bay leaves
    salt and pepper to taste
    1 1/2 cups pasta (we used wagon wheels with zucchini and spinach)


Place all ingredients except pasta in crockpot and cook on low for 6-8 hours. Add pasta (and extra water if needed) and cook on high an additional 20-30 minutes.

Serving Size: makes 8 or more 1-cup servings
