    15oz Canned Black Beans
    10oz Canned Red Enchilada Sauce
    1c Frozen Corn
    8oz Canned Tomato Sauce
    1lb Extra Lean Ground Turkey
    1 packet Taco Seasoning Mix
    1 Tube Refrigerated Buttermilk Biscuits (6 biscuits)
    2c Shredded Mexican Cheese

    **calculations do not include CORN in nutrition**
    (forgot to buy some this time)


Preheat oven to 350.
Brown turkey, drain.
Cut each biscuit into 4 pieces (or more)
Drain and rinse black beans.
Mix all ingredients but reserve 1 cup of cheese.
Pour into greased 9x13 pan. Bake for 30 minutes and then sprinkle on remaining cheese and bake for another 10 minutes. Allow to cool for 5-10 minutes and serve!!

Serving Size: makes 6 servings
