Ingredients

    2 C cooked quinoa
    2 tsp olive oil
    2 tsp garlic, minced
    1 C onion, chopped
    1/2 C zucchini, sliced
    2 C broccoli, chopped
    2 C cauliflower, chopped
    1/2 C mushrooms, chopped
    1 C cabbage, chopped
    3/4 C carrots, chopped

Directions

Cook quinoa according to directions to produce 2 Cups (1/2 C dry). Set aside.

Heat olive oil in large pan, add diced onions and garlic. Saute until fragrant.

Add veggies, minus mushrooms. Saute until desired tenderness. Add mushrooms mix in.

Add cooked quinoa to pan and mix thoroughly.

Remove from heat.

ENJOY!

Serving Size: 4 equal servings (approx 1.37 C/serving)
