    6 ripe tomatoes
    2 cloves garlic
    2 T fresh herbs
    1 med onion
    1 T olive oil
    1 med sweet potato
    250 ml water
    salt and pepper to taste


Peel tomatoes (boil for 1 min then plunge into cold water). Cut and place cut side up into roasting pan. Sprinkle finely chopped herbs, garlic and olive oil over tomatoes and roast at 200C. After 20 mins, add finely chopped onions and freshly ground black pepper and salt. Boil peeled sweet potato in 250ml water until cooked. DO NOT DRAIN WATER. After tomatoes have roasted for 1 hour, add them to the sweet potatoes and water. Blend with a stick blender and serve!!
