Ingredients

    3/4 cup sugar
    1/2 cup butter or coconut oil
    2 eggs
    2 cups mashed over ripe bananas
    1/2 cup buttermilk
    1 tsp. vanilla extract
    1 3/4 cup whole wheat pastry flour
    3/4 cup flour
    1 tsp. baking soda
    1 tsp. salt
    1 cup walnuts
    1/2 cup mini chocolate chips

Tips

Buttermilk can be substituted for milk plus 1/2 tsp. vinegar or lemon juice OR low fat greek yogurt. Flour can also be interchanged. I like the whole wheat for the added vitamins and fiber.


Directions

Combine sugar with other wet ingredients and mix. Sift flour with salt and baking soda. Gradually mix dry ingredients with wet until well incorporated. Add walnuts and chocolate chips and teaspoon into greased or paper-lined muffin tin. Bake for 10-12 min. or 18 min. for regular size muffins.
