Introduction

Number of Servings: 8

Ingredients

    1 tbsp Olive oil
    1 medium onion
    1 bell pepper chopped
    2 cloves garlic minced
    1 or 2 jalapeno peppers diced
    4 skinless chicken breasts cut into ~1 in cubes
    (2) 28 oz cans Hunt's Petite Diced Tomatoes
    (2) 15 oz cans Black beans
    (1) 15 oz can Great Northern beans
    1/2 cup salsa

Directions

Heat large stock pot with olive oil over medium high
Add onions, bell pepper, jalapeno, and garlic and cook until vegetables start to soften
Add chicken and cook until no longer pink on outside
Drain tomatoes and beans, add to the pot and stir
Let simmer for about 10-15 minutes to allow everything to heat through and the chicken to finish cooking
Serve in a bowl and top with either a couple tbsp of sour cream or a handful of cheese (or both!)

Makes (8) two cup servings
