    4 C Egg beaters
    8 large egg whites
    2 C skim milk
    16 slices light wheat bread toasted (2 slices per serv)
    2-10 oz packages frozen chopped spinach (squeezed dry)
    8 0z reduced fat shredded cheddar cheese
    salt and pepper to taste


350 degree oven 45 minutes, cover with foil for first 25 minutes.
Spray 9x13 pan with nonstick spray. Cube toast and spread in pan. Spread chopped spinach on top. Sprinkle cheese to cover. Mix egg whites and egg beaters with milk. Pour over mixture in pan. Cover with foil in fridge overnight.
