    Olive Oil, 5 tbsp
    Broccoli, fresh, 5 stalk, florets only
    Leeks, 2 leek, sliced
    Onions, raw, 1 medium (2-1/2" dia), diced
    Tofu, extra firm, 350 grams, pressed and cubed
    Cheddar Cheese, 100 grams, grated
    *Ancient Harvest Traditional Whole Grain Quinoa, 0.88 cup (use 0.75 to 1 cup, as you please)
    *better than bouillon vegetable base (1 tsp), 2 serving
    Milk, 2%, 1.5 cup
    *Flour, white, 0.25 cup
    *Grey Poupon Dijon Mustard, 1 tsp
    *Red Star Nutritional Yeast, 1/4 cup
    *4C Panko Seasoned Bread Crumbs- 1/3 cup, 2 serving


Preheat oven to 375.

Heat 1 tbsp olive oil and saute onions for five minutes. Add leeks, saute until soft. Set aside, throw tofu into hot frying pan and saute until a few pieces turn golden brown.

Steam broccoli and set aside.

Cook quinoa in water as per package directions. Add 1 tsp Better than Bouillon to water before cooking. Set cooked quinoa aside.

Make sauce. Heat remaining 4 tbsp olive oil and slowly whisk in flour. Very slowly add one cup of water with the last tsp Better than Bouillon dissolved, whisking constantly. Very slowly add milk, continuing to whisk for three minutes. Whisk in mustard and nutritional yeast.

In a large casserole dish combine broccoli, leeks, onions, tofu, cooked quinoa and grated cheddar. Pour in sauce and stir to combine. Top with panko breadcrumbs.

Cover and bake at 375 for about twenty-five minutes. Then remove cover and cook until breadcrumbs turn golden brown.
