Ingredients

2 lbs Chicken livers (remove all fat)
1 large Leek stalk
1 cup chopped onion (or scallions)
4 cloves of garlic
2 Tbsp of chives (or garlic chives)
2 Tbsp of fresh parsley
1 tsp ground thyme
2 Tbsp Raw Honey
1 cup white cooking wine
3 Tbsp Olive Oil
Tips
Try adding different herbs to give it different flavors. I added Herbs de Provance to the batch I made. Serve with Whole Wheat Melba Toast or Bagel Chips.
Directions
Don't worry about chopping everything up too perfect because you're just going to throw it all into a food processor anyway.
Chop up the onions, garlic, chives, leeks, parsley and liver. Heat up the olive oil in a pan. When good and hot add all the chopped ingredients. Add thyme and cooking wine. Cook until the livers are cooked all the way through. Use a slotted spoon and place in a food processor reserving the juice. Start to process. Add honey and some of the reserved juice. Add as much juice to get you the consistency of the pate you wish.
