    1/2 Whole Wheat Pita Pocket
    1 med - lrg egg
    1/2 c of spinach leaves (your call)
    1 wedge of Laughing Cow Swiss Cheese or Garlic Herb
    Salt and Pepper to taste


Poach to your desire. Some like it easy some like it well. Just enjoy!


Prep the inside of the pita pocket ( top and bottom - inside) with the wedge of cheese. Place half of the spinach leaves on the bottom...

In a non-stick pan over low-medium heat, add a pat of butter. Crack an egg into the center of the pan, season with a dash of salt and pepper and then place a top (not necessary, it's your preference) over the egg for about 3 min. Uncover and turn for another 3 min without the lid.

Place the poached egg into the pita pocket of spinach. Gather remaining spinach leaves and place on top of the poached egg. Voila! Breakfast is served.
