Ingredients

    1 eggplant (peeled and sliced 1/2 inch thick)
    1/2 cup Progresso Italian Bread Crumbs
    2 Egg Whites
    1.5 T Extra Virgin Olive Oil


Tips

Top with marinara and fresh mozzarella if you like.


Directions

Peel, slice, dredge in egg white then bread crumbs and fry in olive oil on both sides until golden brown.

Serving Size: Divide eggplant medallions into 6, 3 piece servings
