Ingredients

    Tomato Sauce Recipe Below 2 1/2 Cups Or 2 1/2 Cups Of Other Tomato Sauce

    3/4 Cup Parmesan Cheese
    1 1/2 Cups Zucchini Sliced
    13 oz. Mozzarella Cheese Slices
    1 Cup Shredded Mozzarella Cheese
    2 Tbsp 100% Extra Virgin Olive Oil
    100% Extra Virgin Olive Oil Cooking Spray
    2 Cups Of Cornstarch (for coating you only use 1)
    2 Eggs (for coating you only use 1)
    1 Tbsp Water

Directions

If making my tomato sauce recipe make that first. Otherwise preheat the oven to 350 F and get a bowl and put the 2 eggs in it along with a tbsp of water and whisk them together. Then get a ziploc bag and put the cornstarch in it. Then get a pan and spray it with cooking spray then add a tbsp of oil and turn the pan so it covers everywhere and turn the stove on medium heat. Then take the zucchini and cover it in egg and place in the bag of cornstarch covering each piece completely with the cornstarch. Then place the zucchini in the pan with the oil and repeat the process until all the zucchini is cooked (the first batch may burn a little so after the first batch drain the oil and spray with cooking spray and add the other tbsp of oil). Once that is done line the bottom of a 3 qt oblong pan with the zucchini. Then sprinkle 1/4 cup Parmesan cheese and then place 1/2 the mozzarella cheese slices on top side by side but not overlapping. Then pour tomato sauce over the cheese and repeat the process until all ingredients are gone topping with shredded cheese.
Serving Size: Makes 8 Big Rectangular Pieces
