    1 Eggplant chopped into squares and soaked in salted water for about an hour to remove bitterness
    2 Zucchini chopped into squares
    2 yellow squash chopped into squares
    2 cups mushrooms chopped into squares
    1 c Chopped Onion
    1 LB Turkey sausage
    1 1/2 C spaghetti sauce
    1/2 C Cotilla cheese or light mozarella o any cheese of your liking really


This is even better the second day. It makes a pretty large batch and freezes well too. Enjoy this lite and easy dinner.


Dain the eggplant and place all vegetables into a large baking dish sprayed with pan spray. Add salt and pepper and any other seasonings that you like (I use garlic powder, oregano, thyme and a pinch of cayanne)
Bake at 400 for 45 - 60 minutes mixing 1 or 2 times. While veges are baking brown your turkey and set aside
When veges are mostly done remove them from the oven and sprinkle the turkey over the top and then top that with the spaghetti sauce. It wont look very "Saucie" but as it heats it will thin out and will be plenty. Sprinkle the cheese on the top and bake for about 20 minutes til the cheese is bubbly and maybe a little brown.
Remove from the oven and serve by itself or over a small amount of pasta or with a salad or however you wish. You are getting a great big serving of veges with lots of flavors and colors.
