Introduction

Awesome creamy and hearty soup that makes an entire meal in under 300 calories.

Other options: ditch the meat for a creamy and thick veggie meat or better yet, use a really flavorful or spicy sausage/chorizo. You get twice the flavor but can get away with half the meat.

Ingredients

    1 Large apple, peeled and chopped
    1 Small butternut squash, peeled and chopped
    1 onion
    3-4 Carrots
    Cubed Pork - 1-2lbs (nutritional info is for 2lbs)
    1 cup cauliflower, chopped,
    1 cup milk
    2 cubs broth
    2 T. olive oil

    Spices of choice - pepper, cumin, heavy garlic, etc!

Tips

You could easily make a chunkier version in the crockpot by discarding the blender and throwing it all in together in the morning before work.


Directions

In a large pot, boil apples, squash, and cauliflower in a 2 cups broth (I used water and boullion) until soft. Drain, saving the broth to add to the same.

At the same time, heat olive oil in skillet and brown pork and soften/brown onions and carrots. Add spices of choice (I used a ton of garlic, black pepper, and cumin) When complete, add to broth from veggies and continue to cook on low.

Blend apples, squash, and cauliflower in blender adding milk as you blend. Add back into the rest of soup until thoroughly combined and heated through.

Serves 10.
