    2.5 lbs of red potatoes
    2 large stalks of celery, chopped
    1/2 c yellow onions, chopped
    3 Tb fresh chives
    1/2 c mayonnaise
    1/2 c light sour cream
    1 Tb dijon mustard
    1 tsp salt
    1 tsp pepper
    1 Tb garlic powder
    1 Tb dried dill


1. Boil the potatoes and cook until just tender. Drain and place immediately in fridge to cool.
2. Chop onions, celery, and chives and place in a large bowl.
3. In another bowl, whisk together mayo, sour cream, mustard, and spices (feel free to adjust amounts to your taste).
3. Once potatoes are cooled (about an hour), dice into cubes and place in bowl with other ingredients.
4. Blend in the mayo mixture until completely coated. Chill another two hours before serving.
