    16 oz garbanzo beans (chickpeas)
    1/2 medium onion, chopped
    1/2 c nonfat milk
    1 Tb white flour
    1 Tb ground flaxseed
    1 Tb dried oregano
    1/2 tsp cumin
    1/4 tsp salt
    2 Tb Extra Virgin Olive Oil
    1 Clove garlic, minced
    nutmeg (optional)


1. Combine chickpeas, onion, milk, flour, flaxseed, oregano, cumin, and salt in a food processor. Pulse until a chunky paste forms. Scrape down sides every few pulses. (You may need to add more milk or more flour/flaxseed depending on mixture's consistency. IT should be pliable like ground beef patties). Form into 4 equal-size patties. Dust with a little nutmeg, if desired.
2. Heat oil in large skillet over medium-high heat. Place patties in oil and cook until crisp on one side, about 5-7 minutes. (If you don't wait to make sure a crust forms, the patties may fall apart).
3. Flip and cook on the other side another 4-6 minutes.
4. Serve on whole wheat pita with lettuce tomato, and TAHINI SAUCE (see other recipe).
