Ingredients

Curry seasoning (I use yellow curry)
Milk (for marinade)
Honey
Eggs, fresh (2+)
Stone ground mustard (or premixed honey mustard, I just prefer to make my own)
Coconut, optional (shredded from a bag, doesn't have to be toasted)
Boneless chicken cut into thin strips
"Bisquick" mix (may need more than 1 cup just for breading, all of it will not be used on chicken)
Salt / pepper to taste
Tips
Curry power stains skin and cooking pans occasionally. I recommend gloves while breading and tin foil on your pan.
Bread twice for extra crunch!
Directions
Slice chicken breast into strips, I like to cut them half inch long but just remember to cut all pieces evenly so they all cook in the same time.
Marinate chicken strips in milk, generous amount of curry, honey, mustard, lots of pepper and a little salt. Curry is quite sweet so lots of pepper is key to balance the flavors. (I like to marinate in honey and mustard first for an hour, then add milk for atleast another 3)
Preheat over to 350 Degrees F
Remove chicken and place on clean dry paper towel.
Prepare in a dry bowl your dry ingredients; Bisquick, lots of curry, coconut (optional), salt, and again lots of pepper!
Prepare eggs in a bowl (large enough to dip chicken into) by scrambling them with no milk.
Dip chicken strips into egg wash, let extra egg drip off, dunk into dry batter, then place on cookie sheet.
Once all of your chicken in breaded and on the cookie sheet, bake in the over for 14- 18 minutes, flipping over chicken one time half way through cooking.
Serve with whatever sauces you like. I like to serve with homemade honey mustard!
