Introduction

This is my mother's pancake recipe upgraded to whole wheat, honey, and olive oil. Simply delicious however you choose to eat them! This is my mother's pancake recipe upgraded to whole wheat, honey, and olive oil. Simply delicious however you choose to eat them!
Number of Servings: 20

Ingredients

    2 cups whole wheat flour (I use fresh milled)
    1 t salt
    1 t baking soda
    2 1/2 t baking powder
    2 c buttermilk
    1/4 c olive oil
    2 T honey
    2 eggs, slightly beaten
    1 T vanilla extract

Tips

I use a ratio of about 2 parts hard white wheat to 1 part hard red wheat.


Directions

Combine dry ingredients in 1 bowl. Mix well.
Combine wet ingredients and mix well in a larger bowl.
Pour flour mixture into the liquids, and stir just until moistened.
Heat griddle. Pour 1/4 c of batter for each pancake onto griddle. Cook until bubbles begin to form on top, and bottom is golden-brown. Flip, and continue cooking for about a minute on other side.
Serve warm with sausage and maple syrup or fruit and yogurt.

Serving Size: Makes about 20 pancakes - each pancake is 1 serving.
