IntroductionEdamame Black Bean and Corn Salad Edamame Black Bean and Corn Salad
1 cup Shelled frozen Edamame
Can of organic black beans
1/2 cup Frozen Sweet corn
1 whole chopped red bell peppper
1 whole diced jalepeno pepper (seeds optional)
a nice handful of fresh cilantro chopped
juice of 2 limes
cloved of minced fresh garlic or 1tsp granulated garlic
salt and pepper to taste
Season to taste. Deseed the jalepeno if you don't do spicy or don't add it at all. Also add lime juice to your taste as well, sometimes the veggies really soak it up!I pretty much created this recipe based on Pico De Gallo. Tomatoes and avocados are a great addition! This can be eaten alone or added to a taco, shrimp and fish go well with this.
prepare frozen edamame according to package instructions,add to bowl
rinse frozen corn under warm water in collander, add to bowl
rinse and drain the black beans, add to bowl
add minced garlic or 1tsp granulated garlic
Add Cumin, Salt and Pepper
pour lime juice over mixture and stir. ENJOY!
Serving Size: makes 6 - 1/2 cup servings
