Ingredients

    1 pound dry small red beans, soaked overnight
    6 cups water
    1 medium onion chopped
    4 large stalks celery, chopped
    .5 green pepper, chopped
    6 cloves garlic
    1 tsp. cajun seasoning
    1 tsp. ground thyme
    .25 tsp. ground sage
    .25 tsp cayenne if you like spice
    2 bay leaves

Tips

Can be served over rice or cornbread, recalculate nutritional information accordingly. Best served with fresh chopped onion as a garnish.


Directions

soak beans overnight or do quick soak, rinse and drain. sautee onion, pepper and celery in bottom of large soup pot or dutch oven with a little cooking spray to prevent sticking, when starting to become translucent add garlic and cook for one minute. add beans and water and bring to a boil. add remaining ingredients, reduce to a simmer and simmer for 2 hours or until beans have become soft and water is reduced by 75%.
