really great meatloaf from my husband's Grandmother; good for a couple of meals; our son loves it;
Want 1 Tbsp of dried onions and 8 Ritz Crackers

Number of Servings: 8

Ingredients

    2 lbs ground chuck (lean beef)
    2 eggs, beaten
    1/4 cup milk (what you have on hand)
    1/4 cup ketchup
    1 Tbsp dried onion
    1tsp salt
    1/4 tsp pepper
    1 tsp dry mustard
    8 Ritz Crackers

Tips

Can trim down on the beef by going extra lean but 100% turkey gets too dry. Full fat ritz crackers helps bind the loaf together the best.

Directions

Mix eggs, milk, and ketchup together in small bowl. In large bowl, mix remaining ingredients. Then mix in wet items (egg, milk, and ketchup). Line a casserole pan with foil or spray with non-stick spray. Shape the meat into a loaf and place in the center of the dish. (We don’t use a bread pan. We find it overflows and is too messy.) Coat the top of the loaf with ketchup straight from the bottle to taste. Bake for 50 minutes in a 400 degree oven.
