    4 boneless, skinless fat free (or low fat) chicken breasts, thawed
    2 10.75oz. cans Campbell's Healthy Request Condensed Cream of Mushroom Soup
    2 bags cooked brown rice (preferrably boil-in-the-bag Success brand rice)
    1 tsp salt
    2 tbsp extra light olive oil


Cut chicken breasts into small pieces and cook in skillet with olive oil.
At the same time, boil water and cook brown rice per package directions in a 6qt. pot.
When rice and chicken are cooked, drain and add the rice to the cooked chicken and add the condensed soup to the mixture. Stir to incorporate all ingredients.
Heat casserole for 1-2 minutes and add salt if desired.

Makes 8 1 cup servings.
