Ingredients

    1-2 lb Garlic & Onion Marinated Pork Loin (the loin is a lean option; a pork butt can also be substituted but you’ll want to trim the fat)
    1/2 medium Onion, Raw
    10 oz Original Diced Tomatoes with Chilies
    1/4 c orange juice (optional; can sub broth)
    2 tsp Chili Powder
    1 tbsp Garlic (4 cloves)
    1 tsp Ground Cumin
    1 tsp oregano
    1 bay leaf
    2 tbsp Smart Balance Light
    2 tbsp Canola Oil


Tips

*Serve with lime wedge, Pickled Onions, and chopped cilantro over black beans and brown rice for a full meal.


Directions

Put onion, tomato, juice, all seasoning, and pork into slow cooker. Cover and cook on low 7-8hrs. Shred pork into chunks. Before serving, heat canola oil and smart butter in large fry pan; add pulled pork loin. cook 5-10 min stirring constantly until slightly browned and some pieces are crisp.
