    Avocado, cucumber, red bell pepper, red onion, feta cheese (any kind crumbled) cilantro(as little or much as you like) cherry tomatoes and rice wine vinegar. the goal is to have a little of each in every bite so you may need more of some vs another.


Cut everything into smaller bite size pieces, dice the onion, slice the cherry tomatoes, dice the pepper, avocado and add as much cilantro as you like, it is even good without cilantro. crumble the feta into the mix and then add 2-3 tbls of rice wine vinegar and enjoy!

Serving Size: makes 4-6 1 cup servings
