    1 tsp olive oil
    2 cloves garlic minced or grated
    fresh black pepper
    1 bay leaf
    1 cup pearl barley, rinsed
    2.5 cups vegetable stock or broth
    1/4 tsp salt
    1 beet grated (you want a beet that's around 3/4 a pound)
    juice of half a lemon
    1 tsp dill


pre-heat a pot over medium heat. Add the olive oil and garlic, cook for about 30 seconds

add the pepper, bay leaf, stock, dill, barley, and salt

Cover and bring to a boil

Once boiling stir the mixture and put the heat on low

Cover and cook for 20 minutes stirring occasionally

When most of the water is absorbed stir in the grated beet

Cook for another 20 minutes continuing to stir

Turn off the heat add the lemon juice and salt to taste

Serve hot or cold
