Introduction

Number of Servings: 8

Ingredients

    1 can of chickpeas (garbanzo beans)* - drained
    2 stalks of celery - chopped
    ½ small onion - diced (or 2-3 scallions sliced)
    ½ bell pepper (any color) - chopped
    2 T - Dijon mustard
    2 T - Tahini (sesame seed paste)
    1 T lime juice (optional)
    1 tsp - apple cider vinegar
    1 tsp - Braggs Aminos
    1/8 - 1/4 tsp - ground thyme
    sea salt to taste

    *to reduce the sodium of this recipe - use dried chickpeas

    Some recipes I have seen include mayonnaise but this is great just as it is. However - if you want a more traditional tuna salad try adding it! Adjust the amounts of the ingredients to suit your taste.

Tips

Even those who do not like Chickpeas (garbanzo beans) and tahini LOVE this recipe!


Directions

Mash chickpeas using a fork in large bowl. Add the rest of the ingredients and mix.

Serve just as you would tuna salad.

Serving Size: Makes 8 1/4 cup servings (or 4 1/2 cup servings)
